Recipe: Chili-Cheese Mac:

My friend Cassie sent me this recipe for Chili-Cheese Mac, and I must say... It is now a family favorite! You are all going to love it as well! Thank you so much Cassie! :)


Ingredients:
1 tsp. Canola Oil
3/4 lbs ground beef
1 tsp. garlic powder
1 tsp. ground coriander
1 tsp. ground cumin
2 tsp. chili powder
2 cups beef broth
1 cup water
1 can diced tomatoes & green chilies, undrained (rotel)
8 ounces uncooked elbow macaroni (we use the Gluten Free of course!)
1/2 cup milk
4 ounces cream cheese
4.5 ounces shredded sharp cheddar cheese


1. Heat a dutch oven over medium to high heat. Add oil. Add beef and next 4 ingredients (up through chili powder); cook about 3 min. Add broth, water, and rotel; bring to boil. Stir in macaroni; cover and cook 10 min, until macaroni is done.

2. Heat milk and cream cheese in saucepan over medium heat. Cook 4 min; until cream cheese melts (stirring frequently). Remove from heat, stir in cheddar cheese. Add cheese sauce to macaroni mixture; toss well to coat!
