As you read in my last post, Steven's family is Irish, so of course we would be making Irish Soda Bread for the weekend! This is Steven's late grandmother's (Mommy's) recipe. This holds a special place in Steven's heart, and I am so honored that I got to bake this for my husband!
And we thought about Mommy all afternoon as we were baking away in the kitchen!

Ingredients:
4 cups flour (Gluten Free for us)
1/4 cup sugar
1 cup raisins
1 1/2 tsp Baking Powder
1 tsp Salt
1 tsp Baking Soda
2 eggs
1/3 cup shortening
1 1/3 cup Buttermilk
Mix all dry ingredients in bowl
In separate bowl, mix eggs and shortening
Add eggs and shortening mixture to dry ingredients, and mix well
Add buttermilk and stir thoroughly
Preheat oven to 375 degrees
Coat pan with nonstick spray
Bake 25-30 minutes; until golden brown
Eat and Enjoy!
I think Mommy would be proud!
And of course, we will be serving this with some corned beef and cabbage! :)
